(This is how I command in the kitchen!)
Colin and I are trying to be better about planning out our meals for the week to ensure we eat healthily and work towards our fitness/nutrition goals. In addition, Colin is trying out the Primal/Paleo diet, so we have to be a bit more strict around what I cook. (I decided it’s too hard for me to go straight Primal, but in general will stick to lean protein + veggies and allow cheating on the weekends!)
We both work full time jobs and have busy social lives, but I still really value cooking dinner and sitting down together for dinner. It’s a value my parents instilled in me, and I think it really is important to take that time each day to reconnect. The meals we will be cooking during the week are focused on healthiness, simplicity, and, of course, tastiness!
So here’s the Cookie Palace weekly meal plan with links to the recipes I’m starting with:
Monday – Texas style (no beans) buffalo chili
Tuesday – Kale & pineapple stuffed tilapia
Wednesday – Shiitake mushroom, green bean & chicken stir fry (no recipe here, but you can try this Basil Beef Stir Fry)
Thursday – Spaghetti squash pad thai
Friday – Get me a drink! It’s Friday!
Generally, I cook dinner after work and bring leftovers in for lunch. I don’t like how anti-social this can be when everyone’s going out for lunch every day, so I usually go out to lunch with my teams at least once a week. Wouldn’t it be great if there were a meetup group for brown bag lunch people? Hmm…this could be my million dollar idea!
