Asian Turkey Lettuce Wraps a la Pei Wei

Pei Wei has these lovely ground chicken lettuce wraps that are quite tasty. I wanted to make it at home and use the 3 lbs of ground turkey hanging out in the fridge. Also, I wanted to get rid of the iceberg lettuce head that had been taunting me from the back of my crisper drawer for the last week.


Iceberg lettuce is my least favorite vegetable b/c it tastes like nothing and doesn’t have many nutrients in it. The ONE redeeming factor of this lettuce, however, is the lovely CRUNCH it gives when ice cold. It is the perfect foil for the soft and flavorful meat in this dish. So, if you too have often shunned the plain-jane ice berg for her her more flamboyant sisters spinach, arugula, and kale…take her for a nice quick spin in this dish, and I promise you will see the beauty to be found in this humble plant.

Asian Turkey Lettuce Wraps a la Pei Wei

Healthy, low carb/high protein meal inspired by Pei Wei, but much healthier
  • 1.5 lbs ground turkey
  • 8 oz shiitake mushrooms (any other kinds will be fine.)
  • 4 TB soy sauce
  • 2 TB rice vinegar
  • 2 TB ponzu
  • 2 TB oyster sauce
  • 2 TB minced lemongrass
  • 3 cloves garlic
  • 1 large or 2 small green onion stalks
  • 1 small bunch basil
  • ½ bunch cilantro
  • 1 avocado
  • ½ lime
  • Olive oil
  • Dipping sauce: 4 TB soy sauce, 2 TB rice vinegar, 2 tsp sriracha. Stir to mix.
  • 1 head iceberg lettuce
  1. Finely chop up mushrooms
  2. Mix together turkey, mushroom, lemongrass, soy sauce, ponzu, rice vinegar, oyster sauce and let sit
  3. Mince garlic, finely chop green onions, chiffonade basil, finely chop cilantro and set aside
  4. In a large wok or pan, heat 1 TB olive oil & garlic about 1-2 min
  5. Add meat and cook, stirring occasionally until all liquid soaked back up & thoroughly cooked, about 7-10 min
  6. While meat is cooking, wash and separate iceberg lettuce leaves. Soak in ice water if desired.
  7. Also dice avocado in ½ inch chunks and place in a small serving bowl. Squeeze lime over avocado if desired.
  8. Add green onion and cook another 2 min
  9. Remove from heat and stir in basil and cilantro.
  10. Serve immediately with separate bowls for meat, dipping sauce, avocado, lettuce
